Start by first cutting the top and bottom off of your pineapples. then carefully cut the outer layer off (there will be some brown flecks from the outer layer left on the pineapple and that is ok).
Next, slice the pineapple into 1/2 to 3/4 inch and quarter them.
Arrange them carefully in the glass jar.
Pour the Vodka slowly over the pineapple quarters making sure the pineapple is completely covered.
Seal the container tightly and store in a dark cool place for 7-14 days.
Strain the Vodka infusion into a pitcher. Place the pineapple chunks into a container for a garnish for your drinks (or to eat). Keep refrigerated.
