Homemade Limoncello

Equipment

  • 1 1 gallon jug
  • 1 Lemon Zester

Ingredients
  

Infusion Ingredients

  • 12 each large organic lemons
  • 1 Liter Everclear Can substitute premium Vodka

Simple Syrup Ingredients

  • 2 cups water (for simple syrup mixture)
  • 2 cups sugar (for simple syrup mixture)

Infusion Instructions

  • Clean your lemons (even scrub them if necessary to get any dirt off).
  • Peel your lemons with a zester to just remove the yellow peels (be careful not to peel the pith or the pulp)
  • Place peels into an airtight glass container that has a seal then pour in your Everclear and seal the container tightly
  • Wrap your container in aluminum foil to keep out the light. I also place my container in a dark cupboard.
  • Shake Container every day for 40 days. (If a day or two gets skipped it's ok).
  • After 40 days, strain peels out with a coffee filter or cheesecloth.

Simple Syrup Instructions

  • Place a saucepan on the stovetop. Pour in the water and sugar. Bring to a low boil and stir frequently until dissolved. Let cool.
  • Once cool add your simple syrup to your alcohol infusion.
  • Pour into airtight containers and let sit for 5 days. Then place in refrigerator or freezer to keep chilled for use.

Notes

If you don't have the full 45 days to prep this recipe you can shorten the infusion time to 15 days (still shaking each and every day). Then add the symple syrup mixture and (still shaking) wait 5 more days. You will notice that the color will be lighter as the longer you let the infusion happen the darker the liquid will get.
