How To Make Pineapple Infused Vodka (Stoli Doli)

Who Likes a Simple Recipe?
I have an effortless recipe for Stoli Doli which is pineapple-infused vodka. I will share it with you below but first I have a short story about how I came upon this delicious drink.
That Sweet Taste of Stoli Doli
Many years ago, while visiting our local Mexican restaurant, one of our friends ordered a round of Stoli Doli for the table.
I was skeptical at first as I didn’t enjoy doing shots since I don’t like the smell or the taste usually. Our friend told us that it was pineapple-infused vodka.
The server brought out 8 shots and we each took one. I hesitantly smelled it, expecting the typical awful shot smell.
I was surprised and delighted to realize that the Stoli Doli shot smelled delicious!
We clinked our glasses in a celebratory manner and down it went.
It tasted delicious with a smooth pineapple favor, softening out the sharp vodka. I loved it! So did everyone else and we ordered another round.
A Regular Thing
I began to order Stoli Doli each time we would go to that restaurant. We would order a round for whoever was with us and the next thing you knew it became a regular thing.
I spoke with the bartender one day while I was dining with my best friend. The bartender gave us his recipe for Stoli Doli and told me how easy it is to make.
My friend and I devised a plan to make it for our upcoming New Years’ Eve party at her house.
Time to Test the Recipe
On December 26th we went to the grocery store and Merchants (our favorite Liquor store) for the ingredients.
I bought two liters of Stoli Vodka and five pineapples. The recipe for Stoli Doli called for 4 but we thought we knew better.
We combined the ingredients as instructed (mostly) by the bartender and stored it in a dark location until New Year’s Eve.
The Real Test is in the Taste
On New Year’s Eve, my husband and I joined our friends to ring in the New Year together. Everyone was very excited to try our recipe for Stoli Doli and we started doing shots.
Within a few hours, it was gone and we were munching happily on the pineapple that was left (keep in mind that the delicious pineapple was soaking in the vodka for five days so it was quite potent).
Needless to say, that was a crazy fun New Year to ring in.
Improving the Recipe
When I make my recipe for Stoli Doli (pineapple-infused vodka), I use Ketel One Vodka and let the mixture sit for at least 7 days. Once that process is over I will strain the pineapple out and refrigerate it for up to two weeks.
I do recommend eating the pineapple as well. It has soaked up lots of vodka and eating each little chunk is almost like taking a flavorsome shot.
Pineapple Infused Vodka (Stoli Doli)
Equipment
- 1 2 Liter Glass Jar Sealable glass jars work best
Ingredients
- 1 Liter Vodka Ketel One Preferred
- 2 whole Pineapples Fresh
Instructions
- Start by first cutting the top and bottom off of your pineapples. then carefully cut the outer layer off (there will be some brown flecks from the outer layer left on the pineapple and that is ok).
- Next, slice the pineapple into 1/2 to 3/4 inch and quarter them.
- Arrange them carefully in the glass jar.
- Pour the Vodka slowly over the pineapple quarters making sure the pineapple is completely covered.
- Seal the container tightly and store in a dark cool place for 7-14 days.
- Strain the Vodka infusion into a pitcher. Place the pineapple chunks into a container for a garnish for your drinks (or to eat). Keep refrigerated.
Serving Instructions
Shots
Place the desired amount of shots in a shaker with ice. Shake energetically and pour into shot glasses.
Martini
Pour about 4 ounces of pineapple-infused vodka into a shaker about halfway filled with ice. Shake aggressively so you acquire a bit of foam to top your drink off. Once in the martini glass use a chunk of infused pineapple as garnish.
