I was recently on vacation in the Caribbean and I stumbled across this amazing cocktail called the Clear Pear. It was said to be made with a clarified technique.

The cocktail was stunning! Not only did it look wonderful it tasted amazing! I ventured up to the bartender to inquire about how to make this at home.

When he started to describe it I was nervous. The first thing to get past is that clarifying a cocktail is made by curdling milk into your spirits (or milk washing). Who would think this is tasty?

Fear not, I would not lead you down the path of a bad cocktail. This blog post will be your guide, leading you through the intricate process of clarifying your favorite cocktail recipes.

Once you’ve selected your milk, the process itself is relatively straightforward. After adding the cocktail mixture to the milk, gently stir until fully incorporated. 

Allow the mixture to sit in the refrigerator undisturbed typically anywhere from 30 minutes to a few hours. During this time, the milk will begin to curdle, capturing impurities and clarifying the drink.

After the resting period, strain the mixture through a fine mesh sieve or cheesecloth to separate the curds from the liquid. You can also use a coffee filter if desired.

For best results, you need to strain your mixture two to three times. And be patient because it can take up to two hours for this process.

Once the straining is complete the curds can be discarded, as they have fulfilled their purpose in clarifying the cocktail. What remains is a clarified liquid that has undergone a remarkable transformation.

The drink-to-milk ratio I have found works best is 4:1. So if you have 4 ounces of drink you will use 1 ounce of milk.

Some recipes recommend an average resting time of around 12 to 24 hours, but I have found that it doesn’t change the taste that much (or at all) if I only have a resting time of 2 hours.

Firstly, temperature plays a crucial role in the clarification process. When refrigerating the mixture during the resting period, make sure to maintain a consistent and cool temperature.

Keep in mind that certain ingredients, like citrus juices and certain fruits, may require an extra step of clarification to remove any lingering cloudiness.

Another pro tip is to be patient during the filtration process. Straining the mixture through a fine mesh sieve or cheesecloth may take some time, but it is worth the effort. 

Avoid rushing this step or forcefully pushing the mixture through the sieve, as it can introduce unwanted elements and cloud the cocktail. Slow and steady wins the race when it comes to achieving perfectly clarified cocktails.

Fruity Pebbles Clarified Milk Punch

Ingredients

8 ounces of Aviation Gin

6 Strawberries, cleaned and muddled

2 ounces of Sugar

2 ounces of Water

4 ounces of Pineapple Juice

2 ounces of fresh-squeezed Lime Juice

2 ounces of fresh squeezed Lemon Juice

6 ½  ounces of Fruity Pebbles Cereal milk 

Post Fruity Pebbles, 15 Ounce

(To make the Fruity Pebbles Cereal milk: Blend 6 Tablespoons of cereal with 6 ounces of whole milk into a sealed jar. Shake well and refrigerate it for 2 hours. Strain it into a jar.

To begin, muddle strawberries and pour them into the first glass container. Next, add gin, sugar, water, pineapple juice, fresh lime juice, and fresh lemon juice into the same container. Stir well to make sure the sugar is dissolved. 

In the second glass container add the cold Fruity Pebbles Cereal milk. Then slowly pour the cocktail mixture over the milk. Stir then place in refrigerator for 1-2 hours.

Once the milk curdles, slowly pour the mixture through a pre-rinsed coffee filter. Let the liquid drain into the glass and then pour it back through the coffee filter one to two more times for optimum clarity.

When ready to serve, use a large ice cube and then pour the mixture on top. Garnish with a few Fruity Pebbles and a slice of orange peel. Cheers!

Clarified Whiskey Sour

Ingredients

6 ounces Rittenhouse Rye Whiskey

2 ¼ ounces fresh squeezed Lemon Juice

2 ¼ ounces Simple Syrup

2 ¾ ounces Whole Milk

Slice of lemon peel for garnish

Directions

In the first mixing glass add all ingredients except milk and stir gently. In the second mixing glass add your milk. Slowly pour your cocktail mixture over the milk, stirring again, and let it sit for at least 1-2 hours in the refrigerator. 

Once the milk curdles, slowly pour the mixture through a pre-rinsed coffee filter. Let the liquid drain into the glass and then pour it back through the coffee filter one to two more times for optimum clarity. 

Finally, pour 2 ½ ounces of your strained mixture over a large ice cube and garnish with a lemon twist.
